Please help me decipher: "WT" and "WSb"
Are those the genes describing white horses in this game and how do I interpret them ?

W - White
T - Tobiano
Sb - Sabino

W+ (white) is dominant and is the color that is visible so to speak. 
If a horse has the W+ gene, it will be white, but can carry other colors and patterns. 

I am in no way an expert on genetics so if I´m wrong, please correct me! :) 

Edit: If you want to play around with different genes and colors you can go to Town - Equine Center > Create a Custom Horse? > Choose a breed. There you can go nuts with all the available genes for that breed. 
When you are done experimenting, just click another link or page here on EV.

I understand then that horses from my example are white tobiano and white sabino but if I breed them with other colours is there a chance to get rid of the white or not ?

If you bred that horse with one that had no W gene then there would be a chance that the foal would not have white.
Not sure if you've seen this or not but here's a handy genetics guide from vos
