I’m new and just when I think I’m starting to “get it,” something confuses me, ha. So I bought a foal (Deep Purple) who has high stats thinking I can cube him and convert him later. But now I’m seeing that in his notes his base stats have always been high? So if I convert him later will his non specialty stats still get as low as foundation levels? Then I bought an Akhal teke with low non spec stats and now there’s a +7 next to all of them so they’re higher than 60. And what’s the difference between birth and base stats...? Why did his non spec stats increase?

No, base stats can not be changed or moved around by converting.

A foal inherits base stats from its parents. 
If you buy two foundation horses and train them in driving, their foal will have higher base stats for strength and endurance. You can bring base stats down again over several generations, but it is a long proces and in my opinion not really worth it unless the horse has some amazing other traits (color or confo) that are worth preserving

When you equip a horse with tack, the tack boosts the stats (visible as the green +numbers).
Discipline specific tack (e.g. dressage bridle and saddle) boost discipline stats (AGI and INT for dressage) and the splint boots and tail guard boosts all stats. 
If you remove some or all of the tack, the +numbers will lower or disappear. 

The tack is necessary if you want to show your horse, the higher grade on the tack - the better (grade 5 is the highest).

DIOh, okay that makes sense. So the horse with high non spec stats, should I just get rid of him then? And if the splint boots and tail guard raise the non spec total to over 70 (I didn’t count it so idk the actual number) is it better to just take them off?

What you want to do with the horses is totally up to you! :)

I would leave them on.
The splint boots and tail guard just boosts the stats in shows, they do not affect the horses stats when the horse is bred. 
(EV veterans please correct me if I am wrong here! My brain is half asleep today... :P)

The tack stats are only applied after a horse has entered a show, and arent counted toward the horse's grade.
So your horse enters shows against other horses in the same grade, the stats from the tack help boost your horse's stats after the fact which is good as higher stats gives it a better chance at success. So they're kind of like hidden bonus stats
It hasnt really been tested whether or not the ns stats from tail guards and splint boots negatively impact a horse's show placings. Since most people show with 5/5 tack anyway I dont think it really matters because the playing field is pretty level

high being above 65-70 ns stats, yes they would do better in a riding school rather than in shows.
65-70 range can still make a ton of stats through showing though it starts to depend on the fellow competition in the show
