I would definitely pick a breed that has some colors/markings that are more custom-based (or used to be only for customs) - so Paints/QHs with flaxen (mix in a lot of brown, silver, champagne and you'd get a lot of success with selling foals - I'd definitely enjoy seeing them, haha), Arabians with flaxen and (I think) sooty, Welshies with sooty/pangare/flaxen. Try to find the colors that are least common in the breed you want so you can easily take over the market there. You could even do more than one breed with that many horses and get some very nice color lines going. I know that QHs and Paints always sell colorful horses well, and have a seriously huge line of colors available to mess with.
