I just wanted to clarify. If I breed my horses at 20 yrs and aging in 7 days, will they give birth before they retire, at 20 yrs aging in 2 days? Will have another couple of days to breed them again? I thought that the mare was technically ready to go right after she had birthed her foal, but wanted to make sure.

You can only breed a mare every seven days, so there won't be enough time left to breed a second time.

the cool down period for mares is 7 days. 5 of those are pregnant, two are the day she gives birth and the day immediately after.

So the answer to you exact questions: 1) yes, 2) no

horses can give birth after they retire(as long as they're bred before they retire!) so most people that breed twice very late in life do so at the ages of 20(ages tomorrow) and 19(ages tomorrow)
