Lets say I have an Regional 5 dressage horse and I convert him to endurance. Will he start back at Novice 1?

Nope! He'll stay his level. :) It also puts the stats into a little bit neater for showing.

One horse I converted got his non-specialty stats down to 12!!! :D

^ That is only true for Foundations, as horses maintain their birth stats when their specialty is converted and most lined horse have 350+ birth stats aligned for their parent's speciality(s). So an Endurance Horse with 150 END & 150 INT at birth will not have a drop in non-speciality stats if you convert them to Driving and will rather have a dramatic increase in non-speciality stats.

However all horses will maintain their grade & lvl regardless of pedigree when converted.
