Horses age by 1 year after every 7 days. There isn't a guide for colours, but I'm sure here are some older Tennessee horse breeders who can help you with different colours. :) (I hope you understood, my English is not the best)

Hi Shamrock! Welcome to EV :D

Horses age one year every 7 days, their page tells you when they next age

As far as colors, there's this very helpful guide found in the Game Discussion section of the forum, Here. Some colors such as grey, black, bay, and chestnut come out of the Equine Center pretty regularly, the ones that don't pop up as often would be more rare, rarest being those you have to breed yourself (double dilutes, lots of modifiers on one horse).
Horses with cream genes do come out of the EC, but it's usually not super often and so they can be valuable assets if you wish to breed creams.
The amount of rare colors on the game can fluctuate though, best bet is to look through the breed with the Horse Search, which can be found at the top of the page in Town.

Another good place to look at the coat variations for different breeds is the custom horse generator, which can be found on the Equine Center page, though you may have to be a certain level to access this..... I can't remember.

If you have any more questions there's a FAQ in progress in the Help Section, or if you can't find what you're looking for then feel free to ask here in the forums, as you just did.

I hope you enjoy your time here! ^-^
