If a foundation horse starts to say that it is graying, is it worth it to add that horse to the gene pool? Like is there a chance that a foal from that mare/stallion can not gray when it gets to that age? Or will all the foals gray too at that age? The color factors are so confusing to me. TIA!

Th best way to know if a horse's foal will always be gray is to gene test them at the vet. If your horse is Gg, there is a chance they can pass on the grey gene but also a chance they might not. It's 50/50 depending on the horse you're paring with. However if the horse is GG, it will always have gray foals.

As to whether it's worth it or not, you have to weigh the other factors of the horse against the color. Personally I find it worth it if the horse is Gg, becuase I can always breed that out(or if I'm desperate for the stats/other genes/conformation I bite the bullet and buy a grey tweak).
