Hey yall!
I thought maybe we could have a thread to post on when we make something particularly delicious, or when we need suggestions for dinner (or for a snack ;D)

So, share and request to your heart's content!

Here's my first one:

Wassail - a cozy winter drink, lots of spices!
2 quarts (8 cups) Apple Cider
1 cup Pineapple Juice
2 cups Orange Juice
2 tbsp Lemon Juice
4-5 Cinnamon Sticks
1/2-3/4 cups Sugar
1-2 tbsp Ground Cloves
2 tsp Ground Cinnamon
Combine in a big pot, bring to a boil, turn it down and let it simmer for 20-30 min!

I like mine somewhat spicy and strong, so tweak to your heart's content.

Here's another personal favorite of mine:

Best Homemade Apple Dip
1 pkg Cream Cheese
1/3-1/2 cup Brown Sugar
1/2-1 tsp Vanilla Extract
Apples for dip
-Mix by hand or use a mixer to make it more whipped/fluffy!
The amounts are a bit adjustable to one's own taste preferences. This is one of the only ways I'll eat apples :)

This one's by eye 'cause measurements are for people who use measurements

Mashed Potatoes 
red or yellow potatoes 
salt and pepper
milk
butter
Peel and dice some small red or yellow potatoes. Boil in salt and pepper water until you can stab them with a fork (the softer, the better). Drain them and mash them. Melt as much butter into them as you'd (the more butter, the better) like and stir in milk until they're smooth. Add whatever you like to them, I usually go with parsley and BBQ sauce 'cause I'm a weirdo

quick and easy veggie and noodle soup

* 2 boxes of beef broth or stock
* 1 big can of mixed veggies (drained)
* 1 regular can of green beans (drained)
* 1 regular can of diced tomatoes (with juice)
* pasta of your choice
* onion powder
* garlic powder
* italian seasoning
* tiny bit of oil (canola, vegetable, olive, whatever)

combine everything except pasta in a pot and bring to a boil.  add pasta and continue cooking until pasta is cooked.

Ooh I love cooking! Here's a few recipes I enjoy..

Zucchini Boats
4 medium sized zucchini
1/2 lb ground lean beef
1/4 cup chopped onion
1 clove garlic, minced
1/2 cup grated parmesan cheese
1/2 teaspooon worcestershire sauce
1/4 cup bread crumbs
1 slightly beaten egg
1/4 teaspoon dried thyme
salt and pepper to tase

Preheat oven to 350 F. Cook whole zucchini in boiling water until tender, about 7-10 minutes. Cut in half lengthwise and scoop out pulp. Mash pulp and reserve the shell. In a skillet, cook the beef. Drain fat, then add onion and garlic and cook until onion is soft. Stir in mashed zucchini pulp. Reserve 2 tablespoons of parmesan cheese. Mix all remaining ingredients with zucchini pulp mixture. Spoon mixture into zucchini shells and place on a baking dish. Sprinkle with reserved cheese(I sometimes add other grated cheeses on top too) and bake at 350 F for 25-30 minutes or until heated through.

Greek Tzatziki Dip(Measurements might not be exact for this one.. you might need more dill and lemon juice)
1 container of Greek yogurt (I used 32oz in the past, but this makes a LOT.. maybe go half that size?)
1/2 - 1 english cucumber with peel, grated
1 clove garlic, minced
2 tablespoon lemon juice
2 tablespoon olive oil
2 teaspoon grated lemon zest
3 tablespoon chopped fresh dill (Fresh probably tastes stronger. I never have it so I use dry and have to add quite a bit more to my mixture)
salt and pepper to taste

Stir together yogurt, grated cucumber, garlic, lemon juice, and olive oil in a bowl. Add lemon zest, dill, salt and pepper and whisk until smooth. Cover and refrigerate a few hours before serving. Served best with pita bread, but veggies would probably taste good too!

So I really don't like chicken salad normally, but my mother shared the amazing recipe she uses - with me. Here you all are. I usually adjust this with less grapes and more cranberries due to my preferences.

Chicken Salad Sandwiches
3 chicken breasts, cubed/chopped
3/4 cup celery, chopped
2 green onions (or equal amount of white onion), chopped
1/2 cup seedless grapes, cut into fourths
3/4 cup dried cranberries
3/4 cup miracle whip
2 tbsp coleslaw dressing (Marzetti's is best, but any will do)
1 tsp paprika
1 tsp salt or seasoned salt
black pepper to taste
Baker croissants

Mix all ingredients together. Chill at least an hour, if not overnight.
Serve on the croissants, toast, or lettuce leaves!

This could be a weirdly sounding one but it tastes good & is a go to for a summer lunch for me & mine. Plus its easy to make because I am not a cook!

Tuna & Apple Frittata

Ingredients 
1 large apple or 2 small apples (any variety will do) Peeled, cored & roughly cut into cubes (or triangles if your me!)
225g cooked potatoes cut into small cubes 
1/2 small onion chopped finely (optional I don't use it)
2x 185g canned tuna, drained (I flake mine a little so it's not all sitting in one huge chunk while cooking)
4 large eggs
50g cheddar, grated (or whatever cheese you prefer)
2 tablespoons cold milk
2 tablespoons olive oil 

Recipe 
1 heat the oil in a non stick pan & add the chopped apple & cook for 5mins or until they soften
2 add the potatoes & cook for 3 minutes 
3 sprinkle in the onion & tuna 
4 In a bowl whisk together the eggs & milk
5 Pour the egg mix over the potato mixture in the pan & sprinkle on the cheese. Then place under a grill or hot oven 200 degrees Celsius or gas mark 6 for about 6-8mins until it's risen & set
6 cut into wedges/slices to serve. Can be eaten hot or cold.
