I understand that some players don't set horse's specialty until just before breeding.
In the meantime they cube them and send to a riding school every day.
So I guess the specialty of the riding school doesn't matter to them, does it ?
Do they choose random specialty of the school every day and does it give their horses less stats and less player exp. ?

I usually pick a random specialty for the horse that isn't the one I want to change it to, usually dressage cause it's the top of the list and I'm lazy lol. As far as picking the actual schools, I try to pick on in the correct discipline as putting horses into schools with the same specialty gives a slightly higher turnout of earnings and experience.

However, if you were deluxe then schooling in your own school gives out no money. Just a heads up

I understand that, however I'm wondering: are there any of you, who don't set horse's specialty at 3-year-old (but later: just before breeding). How do you choose a school ? Does the discipline of the school matter at all to you ?

If you do not have a speciality set the riding school will not give you a bonus for same speciality schooling, so it doesn't matter what you school them in. I don't school in 'correct' schools myself even with speciality set horses, I just use the same one so it's easier to collect.

However, if you don't choose a speciality, wrong or correct, you're harming your overall stat total by the time of breeding, as you cannot train your horses without a speciality and receive stat boosts.  So it would be beneficial to choose a speciality even if you are cubing and schooling your horses.

It is possible to do that but I haven't really heard of anyone who does. Without setting the specialty the horse can still do the riding school though I think the game would register it as not being in the correct specialty, so choice of school discipline shouldn't matter.
A major downside to waiting until the very end to select the discipline is the horse would miss out on the stat boosts from training, as it needs a discipline in order to do that.
Setting the discipline the first time also does not move the stats to fit with that specialty, so if you wanted a horse's specialty stats to reflect the discipline it would still need to go through the conversion process.
