Looking for a side project for my horse training abilities.

Currently i have Tennessee Walking horses as my main breed. They are being trained in Endurance and I have goals of high stats, unique colors, and perfect conformation for them. 

But I'm still feeling unfulfilled with only working one breed.... I want to specialize in another breed as well but am torn on which breed and specialty to do! In the past I've done Arabians and Paints, but i kinda want something new. 

Does anyone have a breed in mind that i should do? Which breed and discipline is most in demand?

If you check here there is a list of all the breeds and how many there are. QHs are the most popular but I like Welshies the best; they come in loads of different colors ;)

If your wanting to focus on color I'd go with either Quarter Horses or Gypsy Vanners, as they have lots of colors and patterns. Quarter Horses from what I know are most popular in Western, Gypsies are most common in Dressage and Driving. :)

Akhal-Tekes are my favorite (as that breed is all I have). There aren't a super crazy amount of colors, but its enough to satisfy. I mostly love the art and how the white-face marking looks on them. Teke's aren't super popular but aren't unpopular either so its a nice in between.

One thing I'm doing right now is a side project where I'm working towards specific QH colors that are rare for the breed.
Perhaps you could try something like that?
