There's a possibility I don't understand the whites. I used a coat randomized and got this gene, don't like it and am now trying to get rid of it.

The white gene is a marking, not a coat color. That's why it never changed.

Unfortunately RemRem is correct and The Marking Randomizer/Applicator would have been what you'd have to do to remove white. It's a little confusing because White overides all other colors and markings, but the good news is your horse is a Brown Dun underneath the white instead of a boring old Bay. You will have to use a marking randomiser or applicator to get rid of teh white though.
