Quick Color Applicator Question

I am right to assume that I can use a Color Applicator to change a Gray to say a Black, and the horse would no longer carry the Gray gene correct?

Before I went ahead and assumed and messed up, I wanted to make sure of this, so hopefully someone will know the answer for me already xD
