Deceased Horses

If a foal or young horse dies and you remove the records, does the foal disappear from the parents breeding history? (where it says the number of foals they have had)

If you remove horse records, it just removes the owner and bred by information. You should still be able to access the horse through foal list or in pedigrees. Though this does not apply to horses that had their records removed by being in the Rescue Centre for 3+ days (where they are permanently deleted) or from before records were kept.
