Hi

I have several Gg's and wondered if it is better to breed while they have some colour or wait until greyed out and have some experience.  Is there an age component attached?

There is no age component attached to the game (regarding color) - the genetics are inherited according to generitc rules. "Greying out" is only for fun (remindig us to real life greying out) but has no effect on the genetic inheritance as far as I know.
