So I have some horses where I converted them late on so their nss are high
How do you all lower them? Just breed to low nss horses and they sort themselves out over time?

Having a glance at your horses, it looks like you could double convert some of them to get their lowest speciality stats shown in their base stats (particularly those foundation dwbs). Generally you want to breed to lower nss, for horses with higher than average nss then you would breed down and not show them for a couple generations.

Double convert would be: converting it to the wrong discipline first , and then converting it back to the correct discipline the second time.

Some of them I did their second convert, but their nss stats are still high
 It's ok, I'll just be patient and breed them out

You need to look at their base stats. If they're bred for one discipline. i.e Dressage, they will have Dressage base stats that cannot be shifted if you were to convert them to something else.
