I'm trying to add gray scaling to my skill set, but I'm not sure how you are supposed to color a gray scaled image. If anyone could provide some help, that would be great, thanks.

Fiddle with layer settings.

You should have different layers for the greyscale and the color. Then you can mess with them - multiplay, overlay, soft light, opacity, etc.
