How do multi stat treats work, and ive heard of a few people using multi stat treats on foals until they specialize that foals discipline, does this feature take all the stats earned from birth till specialty and reassign them to the 2 designated discipline identifiers? Slightly confused on what the purpose of multi stat treats is for?  whats the benfit?

How do multi stat treats work
Multi stat treats are just like regular treats, however they can give stats to all of the stat categories. For example hay cubes:
 +0-2 AGI
+0-2 SPD
+0-2 STR
+0-2 INT
+0-2 END

When you fee hay cubes to a horse, you can get 0-2 PER stat. If you're super super super lucky (not sure if it's ever happened) you could in theory get 2 per stats for a total of 10 stats for just one feeding. You could also be unlucky (more common) and not get any stats at all. Usually i find when I treat hay cubes I get 1-4 stats a feeding.

Yes it does. So if your horse was born with 100 stats, and through treating it earns 50 more stats. If you set discipline to something you don't want, and retrain them for 10k for the one you DO want, it will take the 50 earned stats and move them to the discipline's stats (speed and endurance for racing for example).

In Theory, because you have more of a chance for extra stats per feeding, players will feed multi stat treats for foals to try and get as many possible extra stats on them before they turn 3. then set discipline. Then when retraining the extra stats are all grabbed and thrown into the needed stats for the new discipline.

Multi stat treats were really big before the current conformation method. You used to be able to show in conformation and it took all stats into account. Now it's used for the above reason.

Thanks for the clarification, was seeing foals mainly on the hay cubes and wasnt sure why.

My next question is where do you get them?I cant find them in the general store

Hay cubes can be found while trail riding, or while riding schooling horses on a daily basis.
