Honestly, there's so many people breeding for colour and rarity that it's not really all that rare anymore, the rarest you'll find is one of a kind genetic combinations but they really don't add any value to the horse.
Desirable colours are usually flaxen, brown, sooty and silver if they exist in the breed. For breeds with less diverse colours such as the Dutch Warmblood, Thoroughbred or the Arab, there aren't really any rare colours, but some people might focus on keeping them solid or on particular white markings. If people are considering colour, most people seem to consider the amount of genes the horse has, the type of patterning on the horse (some patterns aren't desirable as they are inaccurate or don't match other artwork) and if it carries homozygous or heterozygous genes. For example Arabs only have the base colours chestnut, black and bay, and the white patterns sabino and rabicano, and two modifer genes - flaxen and grey. Out of those colours the most desirable is a flaxen (ff) or flaxen carrier and black, whereas the least desirable colour is grey and bay. However in Friesians, chestnut is slightly more desirable than black, but the majority of chestnuts are related to each other or are from the same Friesian lines and aren't as desirable as a chestnut foundation or short generation Friesian.
So depending on your choosen breed/s it's difficult to know what to breed for. For example, Appaloosa's are most likely to be leopard marked if bought from the Equine Centre. However, they will appear rarer than other patterns because players will cull or surrender the horse if it has no rare genes hiding under it- because a lot of breeders find leopard undesirable.
Stats are always beneficial to the horse, especially if they are showing specific and treated correctly, opening your market up to a lot of other players instead of being restricted to a small group of colour breeders and total stat breeders. Awards don't add value to your horse, but you get some bonus cash for hitting each milestone in showing with the horse.
