I've been trying to teach myself to cook over this past year, as before I never was much of one. 
I need to go to the store later today and I cannot think of what to cook... 

I've done things like stuffed peppers, soups, chicken and rice casserole, pasta things with Spaghetti Squash instead, etc.
I'm trying to eat fairly healthy, so would like to keep the meals high in calories or carbs down. So not super into cheesy things or pasta dishes, etc.  

Any ideas or suggestions? 
I'd love to do some sort of fish thing... but not sure what just yet :)

Ooh, yes. A topic I can relate to... I'm a Chef so I'm literally a walking recipe book. Message me if you want some more ideas.

Some of my favourite things that are fairly healthy are:

Duck breast, sauteed new potatoes, tenderstem brocolli and red wine jus.
Chicken breast wrapped in proscuitto, roasted tomatoes, provencale, chargrilled asparagus.
Grilled Cod fillet, lemon crushed new potatoes, light creamy spinach and white wine sauce.
Lemon and garlic chicken breast, parmentier potatoes, mediterranean vegetables and plum tomato sauce.
Smoked mackerel, boiled new potatoes, roasted carrots and parsnips.

Other than the duck breast (only because I am not sure where I'd get that, is it sold at regular stores? and also have no idea how to cook, etc), everything looks great!

I'm the person that needs step by step instructions with an ingredient list though. Like Idk what Chargrilled even is for example xD

Tilapia is quick and easy, all you have to do is season it and throw it in the oven! I'm no professional chef either- I always have a ton of trouble deciding what to cook. I like to pair this with tartar sauce and broccoli on the side :)

Some of my favorite things to cook are

- Rosemary-rubbed pork chops (also works with chicken breast)
- Skillet chicken pot pie
- Crab artichoke dip (crab can be expensive though)
- Guinness beef stew

Of course, I like to EAT more than that. I just don't cook often.

Not specifically fish, but I really like stir frys because they're so easy and have a lot of veggies.i like adding quinoa to mine.

I also like making soup because it cam keep for a few days.

My boyfriend is a chef so I never cook.

Thank you guys! I'm looking into some of these.
I think I've decided to do Fish Tacos with Mahi Mahi fish tonight. 
BUT I love fish so I'm saving the Talipa recipe for another time.
I've also thought about trying to do a stew of some sort at some point while it's winter. So perhaps I'll look into the Guinness Beef Stew for another date as well.

Marigold; literally my dream right there! Literally life goals is to find and marry a chef! So then he could be the cook of the house! And if they work at or own a restaurant, and don't feel like coming home to cook... They can just bring something home from work :)

Saber, I didn't know it was my dream until we started dating and we cooked together and he just makes the yummiest things. And he's one of those people who is very instinctual and can just throw things together and its delicious. Now when we try to cook together, he usually ends up taking over and I sit there for "moral support."

I tried to emulate the recipe on my own before knowing about that. Fell a little flat. My boyfriend and I went there the other day. Who knew the secret ingredient was freaking BEETS?

I agree with Marigold, anything done stir fried/steamed is very easy to do, and can generally involve any combination of vegetables and meat etc you have on hand. Combining that with rice is straightforward and tasty.

Also baking fish is a good solution and takes very little effort, and if you put foil around and over it with some water around the fish, you can get it steamed as it bakes, which keeps it from getting dry. There are usually baking instructions right on the package when you buy fish.

A tasty quick meal that I like is leftover chicken brest reheated in chicken broth with a dried chipotle pepper. Once cooked remove the pepper and put in sliced avacado. It is great.

Sausage and vegetables
You can use a crock pot or a regular pot for this. You'll need:

Kielbasa or any similar sausage
Cabbage
Baby or Petite carrots
Cauliflower 
Lipton's onion soup mix 
New potatoes (optional)

Cut the sausage, cabbage, cauliflower, and potatoes into bite sized pieces. Place them all into a crock pot or a large pot on the stove. Add in the baby/petite carrots. Mix with a spoon to distribute everything evenly. Add at least 1 cup of water and the Lipton's onion soup mix. Stir again to coat the ingredients with the soup mix flavoring. Turn the crock pot, or your stove top, on medium to low. Keep an eye on the water, the idea is to slowly steam the whole thing. You'll know it's done when the vegetables are your desired tenderness.

I usually cook mine for about 30 minutes give or take. It makes a lot so you can have ready-made leftovers. It freezes and thaws well.

River and Marigold; That is actually a good idea of something I can add into my regular easy meals I make often. Something that isn't that difficult and can make it different by using different types of vegetables, etc. 

Arbutus; I've never thought about putting Chicken with Avocado! I should definitely try that! I don't like spicy things... Does the pepper thing add heat to the taste?

Mouse; wow thank you! I will for sure try this! Seems like a yummy, healthy and easy enough meal to make with leftovers to use! I love having leftovers because they become my lunch/dinner for the next day!
