I have been looking all over but can't figure out what stats are given when treating horses with haycubes or peppermints.  Can someone help me out?

Both give multiple stats to all areas; randomly. 

I highly recommend to NOT feed your horses Peppermints. 
#1 - Much too rare to be a regular treat 
#2 - Too expensive!
#3 - Assigns anywhere 0-15 stats to random stats

As for Hay Cubes; unless you plan on just using it for your young horses before setting them to their correct discipline, don't bother. 
#1 - Assigns anywhere 1-5 stats to random stats
#2 - Way too many people continue feeding Hay Cubes/Sugar Cubes to their horses even after they're able to be shown = raises non-specialty stats much too high. It's frustrating for players who want to show their horses (including me) and makes it hard to find a decent stud/broodmare. 
#3 - It may be easy to get a hold of a lot of these things, but they are best suited for feeding foals. Raises stats high, then set the newly turned 3 y/o to the WRONG discipline, and then pay the 10k to convert to the correct discipline (to force the EARNED stats to go into the two necessary stats for that particular discipline. 

This is JUST a suggestion, you can play EV however you want! 

But I recommend that you stick with the specialty specific treats that are available in bulk purchase from the store.

Dressage; Green Apples and Yellow Apples
Driving; Crate of Turnips and Red Apples
Endurance; Green Apples and Crate of Turnips
Racing; Bunch of Carrots and Crate of Turnips
Show Jumping; Bunch of Carrots and Yellow Apples
Western; Bunch of Carrots and Green Apples

Just to clear things up a bit from Feather's post.
Peppermints give anywhere from 0-15 stats, with a min of 0 and max of 3 into each field.  Hay Cubes use the same method but with 0-2 stats in each field.  Generally you'll never see such a high number as 15, but more like 3-7 for peppermints.  But as she said, they're incredibly expensive.  You can get them randomly through the well when wishing for and item.  They're priced anywhere from 1.5k to 2.5k per use.

Feathered is completely right in saying that people don't like cubed horses in their final specialization.  It might make them seem like they're higher statted, but they are next to worthless, unless their pedigree/color/confo is worth paying the 10k and 2evc to double convert.

The only way to cube feed is to eat the 10k cost of conversion.  I have 32 cube fed paints right now, sitting at 17yo.  They've never been showed, because they would do terrible in shows, and I've only trained and schooled them.  Right before breeding age I'll convert them to western (they're set as show jumping) and breed them.  All the stats will get put into intelligence and speed, and I'll have a whole set of second generation horses that are prepared to show and will skip the low level Novice shows.

But I'm doing this at a cost of 360,000 evd.

I'm not going to make that amount of money back in the first generation, but the foals I keep will make it back over their showing lifetime, along with the second and third set of foals, I'll probably come out even.  The only reason I do it is I have the money to spend on converting them, I don't need to decide which ones I want to show each day, and it awards a higher average stat within the group of horses by retirement age.  

DON'T cube horses if you want them to sell to distinguished breeders, or if you want to seem like one, or if you want to show the horse.  DO cube if you plan on schooling the horse, converting the horse to it's final discipline at a cost of 10k, and don't mind not making showing money (you'll make schooling money though).

For reference, the Item Catalogue (on the Town page) lists all items and stat boosts for treats etc.

Thanks River I did not know that. 

Thank you everyone else. So I could use them on my 0-2 year olds, then I set them to a discipline I don't want them in, and then convert to the one I do in order to get the stats to switch their speciality?

I cube my foals till they reach 3 then train in wrong discipline and pay 10k to convert then feed the treats for the discipline they are trained in. They do just fine in shows.
