When a horse is listed as (graying) in the colour description, it means that it is in the process of turning into a gray horse from it's original colour. For example, your horse may be a bay horse with the gray gene, over time it will turn from looking like a bay horse into a grayed out horse. This was done to minimise the confusion over horses turning into a different colour (as we have a dynamic image process where the colour changes as the horse grows older), rather than being displayed as a gray horse from the start.
