So, when I try to enter a horse into a show of his grade (R1) it keeps telling me I need to raise his grade and I'm confused on why.

You need to improve your horse Grade as his stats have pushed him above his current grade. To do this, go to the horse in question and scroll down to the training information, there will be a button to improve your horse grade there.
