This horse is labeled as Sooty Classic Dun, but with no champagne gene I think that should be Sooty Grullo?

No, the horses genetics are definitely that of a Classic Dun. A grullo would have aa genetics, no A in it.

I think you're confusing Classic Dun with Classic Champagne.

Classic Dun is the dun gene on a bay based horse (EE Ee / AA Aa)
Classic Champagne is the champagne gene on a black based horse (EE Ee / aa)
