How do you increase stats with the new update? Everything is so different and I have no idea how to do anything. I was increasing stats everyday, but now non of them are increasing and it is really frustrating.

Feed no longer gives stats. You need to train horses. Town -> Training Center.
Also, treats (apples, carrots, and so on) sometime give additional 1-2 stats and always improves happiness. And lastly, if your horse wins 1-3 places in show, it may get additional stats.

Training is not working anymore. Abbey has closed it in order to improve it.

So that means treating and showing (if placing) still give you stats, OP. I'd suggest choosing one treat type for all horses (or all of one discipline) so you can buy treat in bulk, compact, and go quickly through your herd. It cuts down on time.
