Upgrading your tack gives your horse a better advantage in shows. The higher the tack is upgraded, the higher the stat boost it gives. You just have to make sure that the tack is at 100% to upgrade it, and unless you're deluxe, you have to repair one piece at a time. 5/5 tack has better durability too.
