Hey,
So since I'm still kinda new to this game I've still got a few questions up my sleeve which I couldn't figure out for myself so far so I decided to ask here.
So what I wanna know is following:
- What do stats, grades and horse points mean?
- What do they say about the horses value?
- How do I get horse points?
- Can I increase the grades? If yes, how?
I really hope someone can answer all my questions :)

Stats (I think that stands for statistics but that's just a guess, don't quote me on this) they include: 

STR (strength) SPD (speed) AGI (agility) INT (intelligence) and END (endurance).

You can get them higher by giving them treats. The current treats are:

Yellow apples (also come in bags; bags of yellow apples) Green apples (also come in bags; bags of green apples) Red apples (also come in bags; bags of red apples) Turnips (also come in crates; crates of turnips) Carrots (also come in bunches; carrot bunches) Sugar Cubes and Hay Cubes. And there are 'special' treats, that includes: Birthday Cake, Easter Bouquet, Flower Carrot Slices, and Peppermints. They can not be bought in the General Store like other treats. You can also get stats in training, riding schools, and shows. Tip for showing: If you want your horses to do good in shows, make sure they have low non specialty stats. (You may already know that but I thought I'd tell you just in case.) ;)

Grades are horse grades based off of how many stats they have. The current grades are Novice 1 (N1) Novice 2 (N2) Novice 3 (N3) Novice 4 (N4) Novice 5 (N5) Local 1 (L1) Local 2 (L2) Local 3 (L3) Local 4 (L4) Local 5 (L5) Regional 1 (R1) Regional 2 (R2) Regional 3 (R3) Regional 4 (R4) Regional 5 (R5) National 1  (Na1) National 2 (Na2) National 3 (Na3) National 4 (Na4) National 5 (Na5) International 1 (I1) International 2 (I2) International 3 (I3) International 4 (I4) International 5 (I5). This is a guide to how many stats you need to get your horses to the next grade:

N1 100-149
N2 150 -199
N3 200-249
N4 250-299
N5 300 -349
L1 350-399
L2 400-449
L3 450-499
L4 500-549
L5 550-599
R1 600-699
R2 700-799
R3 800-899
R4 900-999
R5 1,000-1,099
Nat1 - 1,100-1,299
Nat2 - 1,300-1,499
Na3 - 1,500-1,699
Na4 - 1,700-1899
Na5 - 1,900-2,099
I1 - 2,100-2,499
I2 - 2,500-2,999
I3 - 3,000-3,999
I4 - 4,000-4,999
I5 - 5,000+

As for horse points, I actually am not totally sure about, sorry. :P

Same foes for horse value and how to get horse points, but I think you get horse points in riding schools?

Wow, thanks for this detailed answer :)

I kinda figured out how to get horse points: When the horse is placed in a show.
Still not quite sure about how to tell the horses value but well, I guess I'll figure that out somehow or find someone to tell me ;)

The value of a horse depends on a lot of things stats, non-spec stats, points, color, breed, conformation, and specialty.

A general guide I use is : Value = 100*stats + 5k per dilute (At,Cr,D,Ch,Z,f) +5k per marking gene (T,Sb,Rn,O,Sp,STY,P) excluding tobiano & overo in mustangs, TWH, & shetlands. I don't take conformation into consideration unless it is higher than 80 or lower than 45, and I won't buy a horse with higher than 70 non-spec stats unless they can be fixed with conversion or they can be incorporated into a special project I have. I feel that 10k can be added for every 10 non-spec stats you have below 60. (i.e. 10k for 50 non-spec stats, or 20k for 40 non-spec stats). 


using this horse as an example, 900*100 = 90k for stats, + 5k for Cr, +5k for D, + 5k for Z, +5k for Rn so total price = 110k for value (as a stud/brood you divide that by 2, so 55k for a stud price). 

but this horse would be 300*100 = 30k for stats, +5k for Cr, +10k for PP, +5k for STY, +5k for Rn, but nothing for T because this is a Shetland where tobiano is a less desired marking so the value is 55k and 25k for stud/brood. 

Breed will really impact your ability to sell horses at the prices I used, QHs will sell at theses prices very easily whereas Tekes might not (also if you put horses for straight sell rather than for private auction they sell faster, but it is up to you if you'd like to do this or not).

Wow, thanks. I really gotta read that slower cause it's a bit hard to understand due to all this (At,Cr,D,Ch,Z,f) and (T,Sb,Rn,O,Sp,STY,P) stuff. But I'll eventually get to it :) 
Thanks though for this long explanation, I might take some time to fully understand it ;)

Points are gained from entering shows. Once upon a time, before there were disciplines/stats, points were what determined a good horse and not. Now a days horse points are bit obsolete, but you as a player get points in order to grow levels.
