How can I find out what level my horses started at.
I know that N1 starts at 100 but I have lined horses starting at anywhere between 200 and 500. Is there anywhere I can find this info? 

I have just noticed on a chinco that the base stats were 137 but on the private notes said born with 175.  Is there a reason for base stats to drop or was the previous owner mistaken?

Base stats are in your private notes to the left of the input box. They are the non-transferable stats your horse was born with, however the current stats will be different/higher than the base stats even at birth.

Thank you for the information which i had already discovered but what I meant was how do the stats relate to the different levels.
e.g.
100 = N1
200 = N2
300 = N3 etc
the above numbers is just an example not the real figures that EV use which is what I am looking for.

The Chinco query was a separate issue - sorry I did not make myself clearer.

As I stated in my reply, the reason base stats are lower than birth stats is because it only shows the non-transferable stats. Birth stats that are usually pasted into the notes by the owner include generation and specialty bonuses from the parents hence why they're higher.

A simple search brings up this forum thread with the showing levels.
